Take him to work with you if you can. It might not cure the boredom or stop the chewing but it should give you the opportunity to keep an eye on him and let him know that chewing is not always an acceptable behavior.
I've really only worked with flushers, but I have hunted behind many fine GSP's, they are a great breed. I would ask that question over in the pointer forum and you should receive lots of good advice.
