I have a 22.5 weber bullet and make a mean pork pastrami out of boston butts. I cut off fat, apply a dry cure rub, let sit in the fridge for a week, wash off salt and let soak for an hour, apply a dry rub (without saltpeter) and let it do its work overnight. The next evening load up the weber with charcoal, light and install/fill the water dish, load up the meat, close the bottom vents open the top vent, go to bed and like magic when I wake up it is nearly done. I then pull it apart, put in a cake pan, cover with foil and cook at 350F for an hour to drive out the fat and excess salt. This works great with baby back ribs (don't apply rub after soaking) and beef briskets. I don't have the guts (or money) to try on a full ribeye roast.

I vote for brisket as well. Got some honest to heaven whole cryovac briskets stamped USDA prime, at Sam's last summer, whopping $1.80 per pound, a whole .10 cents higher than choice. Could not believe the difference in cuttability and taste! Look every trip and haven't seen them since.

Lightly seasoned Pork ribs smoked over a pan of apple cider.

BBQ sauce not needed!

Boston Butts hand pulled for sandwiches comes in a close second. BBQ sauce needed only if in a sandwich!

I have tried brisket, but just cant ever get it to be worth my time. I enjoy a good brisket sandwich at Famous Daves though.:)

Any chard mammal flesh will do

Brisket gets my vote.Rubbed w/garlic pepper, red pepper, paprika, onion powder and a little brown sugar for caramelization.Low and slow, when ya think it's ready, wait two more beers.

I'd buy a truckload of prime at $1.80.Out here you can get those crappy, mass produced corned beef for $1.79,but they hit you $4.59 for a raw one. It's funny how you can get top sirloin for less than brisket, and chicken breast for less than wings.

You should try smoking those corned beef briskets to convert them into pastrami. That is all pastrami is after all - bbq'd corned meat.

I will do that.I do like pastrami, but try to not eat too much cured meat.Lots of salt and sodium nitrate.

Haven't met a piece of bbq meat (cooked correctly) that I haven't liked. Burnt ends, brisket, and pork spareribs are my top picks, but I'm also a fan of tenderloins, pulled pork, chicken and sausage. If you like pulled pork, you got to use the Southern, vinegar based sauce on it!

BBQ? I eat it all. I especially like a small (short) end of pork ribs. I buy beef ribs at the store and put 'em on the grill over mesquite-laced charcoal. Tasty.

I bought me a Green Mountain pellet grill and will never go back to gas or charcoal again. The controller is able to keep the temperature wherever you set it in increments of 5 degrees. Cooks with indirect heat so it's very hard to burn anything and I haven't made anyhting on it that I haven't really liked.

Brisket gets my vote although ribs are great. Made two briskets and a Turkey for Thanksgiving and had very little leftovers:)
